If you’re looking for a healthier and more affordable alternative to traditional pizza, this recipe is perfect for you! With just a few basic ingredients, you can prepare a delicious, satisfying, and flavorful meal. Here’s how:

Ingredients Needed:

  • 2 potatoes
  • 1 onion
  • 1 carrot
  • 1 bell pepper
  • 3 eggs
  • Salt and black pepper (to taste)
  • 1 cup of milk (200 ml)
  • 200 g flour
  • 1 teaspoon baking powder
  • 2 tablespoons olive oil
  • A handful of finely chopped parsley
  • Grated cheese
  • Tomatoes (for garnish)

Instructions:

Preparing the Potatoes:

  1. Grate the potatoes and soak them in cold water for 20 minutes. This step helps remove excess starch, making the potatoes crispier.

Sautéing the Vegetables:

  1. Sauté the onion for 2-3 minutes, then add the grated carrot and continue to sauté for another 2-3 minutes.
  2. Finally, add the finely chopped bell pepper and sauté for an additional 2-3 minutes. Set the vegetables aside and let them cool.

Preparing the Batter:

  1. In a large bowl, beat the eggs with salt and black pepper.
  2. Add the milk, sifted flour, and baking powder, mixing well until you get a smooth, lump-free batter.
  3. Add the olive oil and mix well.

Assembling:

  1. Squeeze the potatoes well to remove excess water and mix them with the sautéed vegetables and finely chopped parsley.
  2. Pour this mixture into the egg and flour batter, mixing thoroughly.

Baking:

  1. Line a large baking tray with parchment paper and lightly grease it.
  2. Pour the mixture onto the tray, shaping it into a round crust, just like a pizza. Bake in a preheated oven at 180°C (350°F) for 20 minutes.

Finishing:

  1. Remove the crust from the oven, arrange tomato slices on top, and sprinkle with grated cheese.
  2. Place the pizza back in the oven for another 15 minutes, until the cheese melts beautifully and turns golden.
